Long, broad roots with smooth white skin have a sweet, almost nutty taste. Parsnips are delicious roasted, boiled and mashed, or added to soups. Plant in late spring and harvest after frost for best flavor. If mulched well, parsnips can even overwinter in the ground and be harvested after the spring thaw! Leaves may irritate the skin, so wear gloves and long sleeves for harvesting.
