Collard, Champion (Brassica oleracea)

Large, dark green leaves are tender and delicious, especially after a frost. For continuous harvests, snap large leaves off from the bottom of the stem and allow the top to continue producing. Ann Arbor’s Brines Farm shared this lovely collard with us, saved from their own seed. A cooking green that rivals kale in flavor and versatility.
